Need the ultimate lesson in making roti?! Fear not, you’ll learn to make the perfect roti and curry dishes to go along with it! Seasoning the goat ,for curry goat in “green seasoning”, a blend of fresh herbs used in a lot of Trini dishes that includes ginger, garlic, pimento peppers, thyme, chadon-beni, lime or lemon juice , scallions and more. You’ll then learn to cook channa and aloo, (potato with chickpeas), dried chickpeas are soaked overnight, then boiled until tender, and then cooked down with potatoes and spiced up with curry and other fresh green herbs You will also be making spicy pumpkin and apple amchar
