No, I’m not going vegetarian; I do enjoy a number of vegetarian dishes though. This is one of my favorites and has become my “go-to” meal when I want something quick and healthy to eat. Truthfully, I love anything with curry in it, it’s one of my favorite spices.
1 Can Goya Butter Beans
1 Handful of Baby Spinach
2 Cloves of Garlic
1 Plum Tomato
1 1/2 Tablespoon of Curry Powder
Salt & Pepper to taste
1 Cup of Ready Made Brown Rice
Steamed String Beans
Rough chop spinach, tomato and garlic. Coat a pan in olive Oil add curry in the oil and let it cook for a few minutes. Put the vegetable drained can of butter beans to the pan. Add salt and pepper to taste, stir all together and let it simmer for 10-15 minutes. Serve with brown rice and steamed string beans.
