I’m starting a new series every Friday for Food or Fitness, where I’ll share a recipe or fitness related item that I love. I’ve been making an effort to eat healthier and exercise more, with a few indulgences here and there, so I wanted to share here on S&V. Make no mistake, I’m not a nutritionist, health nut, or gym rat just looking to keep myself motivatde and share what I like. I hope you’ll share with me too!
A co-worker of mine told me a bout this cucumber salad. I have to say it’s one of the best salads I’ve enjoyed in a long time. I’ve been enjoying it for the last few weeks (Typically get 3-4 servings in one salad). I added a little protein with some jerk chicken that I bought and it made a perfect balance of protein and veggies.
- 2 Cucumbers (or 1 Large) Diced
- 1 Avocado
- 1 Can of Black Beans
- 1 Can of Corn
- A Handfull of Cherry Tomatos (halfed)
- A Handfull of Shredded Carrots (I buy the carrots shredded)
- 1 Lime (I didn’t have a lemon, but the lime was just as great)
- Salt & Pepper
Mix all the ingredients and that’s it! Rinse the black beans and corn before mixing. I kept in the refrigerator for 2 days, had the salad twice for lunch and once with dinner.
